
A great-tasting side dish that is good for get-togethers and holiday meals. It is a breeze to prepare, but does take an hour to bake. This recipe came from an issue of Quick Cooking.
Scalloped Corn
6 servings
Ingredients:
4 cups fresh or frozen corn
3 eggs, beaten
1 cup milk
1 cup crushed saltines (about 30 crackers), divided
3 tblsps. butter or margarine, melted
1 tblsp. sugar
1 tblsp. finely chopped onion
Salt and pepper to taste
Directions:
1. In a large bowl, combine the corn, eggs, milk, 3/4 cup cracker crumbs, butter, sugar, onion, salt and pepper.
2. Transfer to a greased 1 1/2 qt. baking dish.
3. Sprinkle with remaining cracker crumbs.
4. Bake, uncovered, at 325 degrees for 1 hour or until a knife inserted near the center comes out clean.
