
Nice change of pace from regular tacos. I have been making this main dish for many years. I believe the recipe was from an issue of Quick Cooking. Quick to prepare and only takes about 20 minutes to bake.
Taco Casserole
4 servings
Ingredients:
1 pound ground beef
1/4 cup chopped onion
1 envelope taco seasoning
1/2 cup water
1 cup crushed tortilla chips
1 can (16 ozs.) refried beans
1 cup (4 ozs.) shredded cheddar cheese
Additional toppings as desired.
Directions:
1. In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
2. Stir in taco seasoning and water.
3. Cook and stir until thickened, about 3 minutes; set aside.
4. Place chips in a greased 8-inch square baking dish.
5. In a bowl , stir refried beans until smooth; spread over chips.
6. Top with beef mixture and cheese.
7. Bake, uncovered, at 375 degrees for 15-20 minutes or until heated through.
8. Top with additional lettuce, tomatoes, sour cream as desired.
